able to understand why an Arab drink (coffee), has been transformed
by the master art of craftsmen with Italian taste, into a delicious
nectar called "Espresso". 25 milliliters of water at 88°C that
pass, with a pressure of 9 atmospheres, through 7,5 grams of roasted
coffee, ground and pressed, for 25-30 seconds forming a
hazelnut-colored liquid with dark oak nuances, brought to life by
tawny reflexes, by solid cream with a refined texture.
The aroma of the
espresso must be intense and rich of notes of flowers, fruit,
chocolate and toast, while it must taste full-bodied and velvety,
rightly bitter and never astringent. This is the Italian espresso,
the excellent manifestation of a country like Italy which studies,
knows, enhances and exalts the wonderful products of nature, and is
then able to export its art across the whole world.
